chocolate and banana loaf

This is such a simple, easy recipe that tastes AMAZING!!! It’s from the book that accompanied the first series of Great British Bake Off but I made a few adaptions. We had some left over Easter eggs which I crushed up and used instead of the dark chocolate (not a dark chocolate fan anyway so it worked for me!) and I also left out the walnuts.

Best served warm with a cup of tea.

Ingredients (for a 2lb loaf):

250g self-raising flour
a good pinch of salt
150g caster sugar
100g unsalted butter, melted and cooled
2 medium free range eggs, beaten
2 large (or 3 medium) peeled, ripe bananas
75g dark chocolate, chopped*
100g walnut pieces*

*or just 120g milk chocolate instead of these if you want to do what I did

1. Preheat oven to 180C/350F/gas 4
2. Mix the flour with the salt and sugar in a mixing bowl. Add the melted, cooled butter and the beaten eggs. Roughly mash the bananas with a fork and add to the bowl. Add the chocolate and walnut pieces* and mix all the ingredients together with a wooden spoon until thoroughly combined.
3. Transfer the mixture to a 2lb loaf tin (I use loaf tin liners, available from Lakeland, which make loaf cakes amazingly easy to serve) and spread evenly. Bake in the preheated oven for 55 minutes until the loaf is a good golden brown and a skewer inserted in the middle comes out clean.
4. Leave to cool for 5 minutes, then remove from the tin and leave to cool before slicing. Store in a airtight container.

Voila. Yummy cake and it’s so great ’cause it’s a stick it all in and mix it all together in one go jobby which means only one bowl to clean up… bonus!
