gnocchi: the best 5 minute meal

Butter Gnocchi with Spinach, Mushrooms and Garlic

First off I want to welcome my lovely new followers! Thanks for getting on board, I hope you find something interesting and worthwhile here amongst the stories of my little life. Today I wanted to share one of my favorite recipes with you. I love it because it takes literally 5 minutes to make (no exaggeration), is ridiculously cheap and so, so tasty. Gnocchi is always one of my favourite foods in the world. The texture can be a little bit odd at first but I fell in love with it pretty quickly!

So here’s one of the easiest recipes you will ever read/use…

Serves 2

You will need:

  • 350g gnocchi
  • 25g butter
  • 250g mushrooms
  • 1 clove garlic
  • 100g spinach (fresh or frozen, just make sure you cook/defrost the frozen according to its packaging first)
  • salt and pepper to season

How you do it:

Put a pan of water on to boil with a dash of salt. Cook gnocchi according to pack instructions and drain well.

Heat a frying pan and add half the butter. Add the mushrooms, season and fry on a high heat until golden brown. Peel the garlic glove, crush and add into pan once the mushrooms are done. Toss for a few seconds until you begin to smell the garlic.

Now add in the cooked gnocchi, spinach and the rest of the butter into the mushroom pan. Toss everything together over the heat until the spinach wilts (if its fresh, if using frozen just toss it until it all feels nice and hot enough to eat).

Serve up and enjoy straight away!
